Rubens (sauce): Rubens sauce is, in classic cuisine, a sauce prepared from a brunoise of vegetables wet in white wine then reduced, added with fish stock, simmered, strained, defatted and again reduced.
This preparation is then flavored with Madeira, bound with egg yolks, then mounted in red butter and completed with a drizzle of anchovy essence.
