Paratha (Indian cuisine): Paratha is an unleavened Indian bread made with a light puff pastry, which can be fried but is really at the top when cooked on a large metal plate. Paratha dough is made from atta, which is chapati flour.
Very tender and crispy, the paratha goes wonderfully with all chutneys and other vegetable yogurts as an appetizer, starter, or as an accompaniment to curries.
