Mustard sauce: Mustard sauce is a sauce made from strong mustard or old-fashioned mustard depending on the use.
It is based on the cooking juices of the meat deglazed in white wine, where the chopped shallot has returned. Add strong mustard and crème fraîche or whipping cream.
The mustard sauce accompanies red or white meats and of course the famous andouillette from Troyes (or elsewhere).
