Meyerbeer: “Meyerbeer” is, in classical cuisine, the name of a preparation of fried eggs dedicated to the German composer Giacomo Meyerbeer (1791-1864), whose operas were very successful in Paris during the Romantic period.
The fried eggs are served with grilled lamb kidneys and surrounded by a cordon of Périgueux sauce and truffle blades.
