Longchamp (soup): "Longchamp" is the name given, in classic cuisine, to a soup derived from a Saint-Germain purée (peas), in reference to the green color and the name of the main Parisian racecourse. Longchamp soup is sometimes garnished with bacon or lardons or slices of sausage and croutons. Some chefs add a touch of lightly salted whipped cream on top of the soup.
