Guedid (Maghreb cuisine): Guedid (or kadid) is camel or mutton meat seasoned with coriander, salted and dried in the open air by being hung on strings. Its very pronounced taste is a bit like bacon.
Pieces of this meat are grilled on skewers on a small brazier.
