Lathuille (father's chicken): Father's chicken Lathuile is a fricassee of chicken in white wine, chopped shallots and veal stock or roast cooking juice, served with raw sautéed apples, spring vegetables and stock sliced artichokes.
This dish was served at the Père Lathuile cabaret, an establishment immortalized by the impressionist painter Édouard Manet (1832-1883) who frequented it.
