Busecca: Busecca is a soup from Ticino (southeastern canton of Switzerland), influenced by the traditions of neighboring Lombardy, which consists of a wide variety of ingredients: vegetables (carrot, beans, tomato, celery ,....), tripe or veal strawberries, and of which there are many variants.
Busecca is flavored with a puree of marjoram, sage and fresh basil, and is always served with grated cheese and olive oil.
