Bufala: A cousin of the cow, the bufala (buflonne in French) is an Italian cow with a black coat and backwards curved horns from the Campania region, more precisely in Lazio, south of Rome. Originally from Indian rice fields, it was introduced to Italy in the XNUMXth century. Its very flavorful milk is used to make mozzarella di bufala campana (AOC).
