Broth: A broth is the liquid obtained from cooking boiled meats or vegetables (boiled or stew for example), used to cook (instead of water) certain dishes and make sauces and soups . In the past we called the broth "brouet" or "Chaudeau".
Today there are extracts, liquid or solid (tablets or cubes), to be dissolved or diluted in water.
