Snow: "Snow" is the name given to egg whites beaten or whipped to a firm consistency, used to prepare a number of entremets (eggs with snow) and pastries.
Also called “snow” is a kind of sorbet made from red fruit juice with added sugar.
Finally, “Florence snow” is called very light white flakes of pasta, used to garnish soups.
