Byzantine: The expression "à la byzantine" is used, in classic cuisine, for a garnish for butcher's cuts, especially beef, consisting of potato crisps golden in the oven, garnished with mashed cauliflower à la cream, and half lettuce stuffed with mushroom duxelles and braised in the oven on a bed of herbs.
The same filling is also called "à la bisontine" (the term may come from Besançon, Doubs prefecture in the Franche-Comté region)....
