Ajlouk (Maghreb cuisine): Ajlouk is a dish from Maghreb cuisine made from zucchini or eggplant that are steamed or grilled, almost charred.
The blackened skin is removed and the pulp is crushed with a pestle and mixed with harissa, lemon juice, crushed garlic, caraway, coriander and olive oil.
