Steep: adj. Lack of youth, "stiff" is said of a wine that is both very tannic and acidic, a wine with high acerbity. Its tannins dry out the mouth making the wine stiff and hard. Malic acid, present after alcoholic fermentation, tends to make the wine stiff but its degradation into lactic acid will soften it, giving it freshness and roundness. See Malolactic fermentation....
