Stabulation: nf Stabulation is a winemaking technique. The must which is put in vats in stalls for the deposit of the lees.
This practice takes place with a ripe, healthy and destemmed harvest. Is carried out by means of a cold group or a thermoregulated stainless steel tank. The recovery of the must can be around 12 to 14°, after enzymation and sulphiting. The stalling is carried out at temperatures of around 6 degrees. The time of this operation can last from 4 to 6 days...
