Pique: adj. A pitted wine is a wine affected by bacteria which have transformed the alcohol into acetic acid, resulting in that characteristic smell of vinegar. This bacterial wine disease caused by contact with oxygen in the air is acescence, an irreversible disease which results in a so-called pitted wine marked by a pronounced sour smell, close to vinegar (acetic pitting equals acescence ).
