Fer-servadou: The Fer servadou N or Fer N grape is a black grape from the South-West of France which gives wines for aging.
Iron belongs to the ampelographic family of Carmenets. It would have been brought back, in the Middle Ages, from the Spanish Basque Country by pilgrims returning from Santiago de Compostela.
It is present in all the vineyards of the southwest, either as an exclusive grape variety in Marcillac, or as an obligatory grape variety in the blend in Gaillac, where it enters Madiran.
