Pentoses: nm pl. Pentoses are sugars (arabinose, xylose, ribose, etc.) present in grapes, the molecule of which contains 5 carbon atoms. Grape must and wine naturally contain pentoses and hexoses (mainly glucose and fructose), which constitute reducing sugars. The pentoses present in particular in the stalks and the skin of the grape are not (unlike the hexoses) fermentable (not destroyed by fermentation). So these are sugars...
