Amazake (Japanese alcohol): Amazake (甘 酒), is a low alcoholic drink made from fermented rice. This is the traditional sake that is drunk during the doll festival, Hina matsuri, on March 3 in Japan.
This drink dates from the Kofun period (古墳 時代, Kofun jidai) and is mentioned in the Nihon Shoki (720). It is a type of beer belonging to the Japanese food family made with koji as well as miso, soy sauce or sake (nihonshu).
