Flash-pasteurization: locut. Flash-pasteurization (or thermoflash) is a pasteurization process. It destroys populations of acetic and lactic bacteria, eliminates brettanomyces (kinds of yeasts responsible for odors which constitute a defect in a wine) and yeasts from refermentation.
