Fish glue: locut. Fish glue (or isinglass) is a kind of gelatin extracted from the swim bladder of sturgeon. It has the property of being soluble in water and insoluble in alcohol. It is used to clarify wine by fining (often associated with bentonite). It refines the organoleptic characteristics of white and rosé wines while improving their clarity and shine.
