Bloom: nf Bloom is this waxy dust, a kind of varnish, giving this velvety appearance to the grain and with which the film that envelops the grape is covered. It makes the film (the cuticle) non-wettable. It retains dust and bacteria but it is also a reserve of ferments. It contains the yeasts involved in fermentation, lactic acid bacteria, fungi (botrytis, mucores, aspergilius, penicilium…)....
