Saulxurois: Saulxurois is a soft cheese with an unpressed and uncooked washed rind, made from raw cow's milk and made in Champagne.
Square (like the Eastern square) with a side of 10 centimeters, 3 centimeters thick and approximately 250 grams.
Flavor: A slightly thick crust which offers a double texture with a very tender heart. Notes of fresh milk tending towards a marked bitterness give this cheese a very animal character, especially when maturing is prolonged.
