Saint Albray: "Saint Albray" is a brand of cheese, made from pasteurized cow's milk, with uncooked pressed paste. Its consistency is tender, but called "soft" by the producer although it does not correspond to this category of cheese. Saint Albray "affiné" is produced in the Chaumes cheese dairy in the Jurançon located in the South-West of France, New Aquitaine region.
