Ragusano (Italian cheese): Ragusano (also called Caciocavallo Ragusano or sometimes scaluni -stair step in Sicilian-) is an Italian cheese made in the provinces of Ragusa and Syracuse, on the Hyblean Mountains in Sicily.
It is a spun cheese made from raw cow's milk. It has benefited from a protected designation of origin since 1995.
