Polypore: "Polypore" is a generic term designating many species of fleshy basidiomycete (polypore) fungi, growing on tree trunks (ash, oak, birch, etc.). The tufted polypore, or "wood hen", and the umbel polypore are renowned in the East for their consistency and flavor, which go well with those of poultry and fish.
