Trappe de la Providence de Bricquebec: Religious community established in the Manche region which produced a Normandy cheese made from cow's milk, with uncooked pressed cheese. This production, abandoned in 1961 by the Trappist Fathers, was entrusted to the cooperative dairy of Valognes (Valco), as well as the Providence brand.
The cheese is a flat disc 22 cm in diameter and 4 cm thick, weighing 1,4 kilos. Its rind is supple and smooth, its paste tender and with a fairly mild flavor.
