Cyriaque Gavillon: Cyriaque Gavillon is a French pastry chef who invented the “opera” cake in 1955.
It was in the Dalloyau house that Cyriaque Gavillon created a new form of entremets with visible slices for which a single bite was enough to give the taste of the whole cake.
It was his wife Andrée Gavillon who baptized it “opera” in homage to a prima ballerina and her little rats who made entrechats in the shop.
