Po' boy (American cuisine): The po' boy or po-boy and po boy (from the English poor boy, "poor boy") is a submarine sandwich originating from Louisiana. It almost always consists of meat, usually roast beef topped with its juice, or fried seafood (prawns, squid, oysters, etc.). The ingredients are served in a New Orleans baguette derived from French bread.
