White (to): locut. The expression "à blanc" is used for the cooking of an empty crust, made of broken dough or to darken, intended to be garnished with a device which would risk soaking the bottom, or delicate fruits which cannot undergo s of cooking.
You can add dried vegetables to the crust in order to contain any blistering during dry cooking.
The expression “blank” also designates cooking without coloring.
