To sand: v.tr. "Sanding" is the operation which consists in bringing to a crumbly state a mixture of ingredients intended for a shortcrust pastry or shortcrust pastry (flour, salt and fat, sometimes sugar).
The sanding of the dry elements and the butter is done first with your fingertips, then by taking the mixture in small quantities, which you rub between your palms. Water or eggs are then added and the dough is rolled into a ball and must rest.
