Rennet is a substance secreted and extracted from the abomasum (suitably named fourth pocket) of young ruminants (cattle, sheep or goats) and containing an enzyme which causes milk to curdle and is composed mainly of chymosin.
To make rennet, the cheese maker cuts small pieces of caillette and lets them macerate overnight in whey.
