Protease: Proteases (or peptidases or proteolytic enzymes) are enzymes that break the peptide bonds of proteins. This is called proteolytic cleavage or proteolysis.
This process involves the use of a water molecule which classifies them among the hydrolases.
The biological functions of proteases are varied: they are involved in the maturation of proteins, in the digestion of food, in blood coagulation, in the remodeling of tissues in the neck, etc.
