Leg sleeve: locut. A leg handle (also called a "leg iron") is a clamp equipped with a screw key and a handle. We insert the end of the bone of a leg or a ham on the bone to hold it, by tightening the key, during the cutting. The lamb handle generally accompanies the carving cutlery (fork and knife), to which it is matched.
