Gluconic acid: Gluconic acid (C6H12O7) is a very common acid in both animals and plants. It is most often embedded in a larger molecule as is the case in various gums. It is obtained from acacia gum, from which it is isolated in the form of needle crystals melting at 165°C. It is soluble in water and alcohol. It is authorized in Europe as a food additive (E5749).
