Disodium inosinate: Disodium inosinate (E6311) (or disodium 5'-Inosinate or abbreviated as IMP3) is a di-sodium salt of inosinic acid (E630).
It has an umami flavor and is used as a food additive in foodstuffs. It is used in synergy with another flavor enhancer, monosodium glutamate (E621, the sodium salt of glutamic acid).
It is mainly found in hydrated form (EINECS number 225-146-4) with 1 to 7 water molecules....
