Collagen: Collagen is part of a family of so-called structural proteins, most often present in fibrillar form. It is present in the extracellular matrix of animal organisms. These proteins have the function of giving tissues mechanical resistance to stretching.
It is the most abundant protein in the animal kingdom, representing a quarter of the protein mass of mammals since it is present in the bones, cartilage, pulmonary interstitium, musculature, etc.
