Coat: v.tr. “To coat” is to dip a relatively water-rich food in batter, to isolate it during cooking in a frying bath (vegetable or offal fritters, in particular). To coat also means to cover a preparation of sauce (hot-cold, for example) or jelly. Finally, the confits must always be perfectly coated with fat for better preservation.
