Gruff: adj. In its first meaning, "bourru" describes something that has the roughness, the coarseness of fluff, which is the waste product of the combing of wool. Bourru (or bourret) wine is a wine barely drawn from the barrel which must be drank young. This wine still rests on its lees and it is made cloudy by the lees. Not finished, only the alcoholic fermentation has just ended....
