Soft washed rind cheese : locut. Soft dough is dough made from raw milk or pasteurized but not enriched with cream and not exceeding 50% of fat. The crust is frequently washed in order to penetrate the salt into the dough.
These cheeses (thorns, herb, maroilles, munster) require a refinement long and slow so that Fatty acids oxidize, developing flavor and Odour stronger than the cheese à bloomy rind.
