Zymase: nf (word coming from the Greek of the Greek azumos, from zumê "leaven" and ase whose meaning is enzyme (synonym of diastase). This enzyme (or diastase produced) by yeasts (*) (of the saccharomyces cerevisiae type for example ) causes alcoholic fermentation of glucose, which is a soluble ferment, or zymase, capable of breaking down sugar into alcohol and carbonic acid.
