Pedro ximenez : Pedro Ximénez B is a Spanish white grape variety.
History of Pedro Ximénez: Still known under the names of Pedro Ximen, or PX, this grape variety takes its name from that of a soldier of Charles V, the German Peter Siemens, who is said to have brought this grape variety from the Rhine valley to in Andalusia.
Geographic: It is grown in the south of Spain, in the vineyards of Andalusia. It is used to develop the designations of origin of this region: Sherry, Malaga, Montilla-moriles or condado of Huelva.
Cultivation skills of Pedro Ximénez: The clusters of Pedro Ximénez are large, with green to yellow berries. Their skin is thin, which is important in the manufacturing process of certain PX wines: to increase the concentration of the berries, the bunches are exposed to the sun a few days after the harvest. The thinness of the skin allows rapid drying and a very high sugar level.
Pedro Ximénez technological skills: In the Jerez region, Pedro Ximénez is sometimes used as a single grape variety to produce very sweet sweet wines, with a very dark color, almost black. It is more often blended with olorosos, sometimes amontillados (dry oxidized wines from the palomino grape variety), to which it gives roundness. We then talk about cream.
In the Malaga region, PX is the grape variety used inland, while the coast is planted with Moscatel. The two grape varieties are rarely blended in Malaga wines.
In the Montilla-Moriles region, PX is the king grape variety. It is particularly adapted to the extreme heat of these inland lands of Andalusia.
