Moustillant: adj. A sparkling wine is a slightly sparkling, even pearling wine. It is indeed common for a wine at the end of fermentation (or in refermentation) to still have a hint of carbon dioxide in the mouth. This wine is said to have a musty, it tingles in the mouth but without aggressiveness like a Muscadet sur lie, a Gaillac (pearl) or a Sylvaner ....
