Microcrystals of tartar: locut. Microcrystals of tartar are the result of the manifestation of tartaric acid and calcium or potassium in the form of transparent crystals of very small size. They are colorless and very little soluble in wine. If the wine has not been subjected to the cold during its aging in tank, they can precipitate later in the bottle. Their presence in no way alters the taste of the wine and the precipitation of tartar crystals is never a defect.
