Metatartric: adj. Metatartaric acid* (E353) or ditartaric acid is obtained by heating tartaric acid under vacuum. It prevents the formation of scale crystals when the wine (in bottles) is subjected to cold. It communicates neither taste nor smell to the wine. Metatartaric acid is applied to wine at a maximum dose of 10 g/Hl. It is effective in the bottle for over a year. Product not classified as dangerous within the meaning of Directive 67/548/EEC, its use is nevertheless prohibited.
