Inerting: nm Process which consists in protecting a wine from oxidation by using a neutral gas.
During the aging phase, storage away from oxygen in the air allows the wine to preserve its qualities. Inerting the tanks with neutral gases (generally nitrogen) provides effective protection. Wine is indeed very sensitive to oxidation phenomena leading to irreversible alterations such as deterioration of taste, color or acetic sting.
