Closed: adj. "Fermé" is used in tasting to qualify a wine that delivers few aromas, which appears austere on the nose. This gustatory “posture” of the wine shows that it is in an intermediate phase. Shortly after bottling, the wine declines to reopen again and present itself with fruit aromas. Then it declines again before reopening for a longer period where it will reach its peak. The wine is closed when it is between these two summer periods.
