Bouchet: "Bouchet" is the name of the grape variety, synonymous with Cabernet Franc, which is so called especially in the Libournais (Saint-Émilion, Pomerol, etc.) where it plays a very important role alongside Merlot. To take two emblematic examples, Bouchet occupies 60% of the grape varieties of Château Cheval-Blanc (Premier Grand Cru Classé "A" of Saint-Émilion) and 50% of that of Château Lafleur (one of the mythical wines of Pomerol ).
