Frênette: Frênette, or ash cider, is a slightly alcoholic fermented drink made from ash leaves (*).
(*) Ash is a common tree found in European forests (oleaceae), with light, hard and elastic wood.
It was originally made solely from ash leaves, the sugar coming on the one hand from the sap exudate of the leaves bitten by the aphid Gossyparia ulmi (ash manna) (**) and on the other hand sweet droppings (honeydew) of this aphid....
