Chymosin: nf Chymosin (or rennin) (not to be confused with renin) is an enzyme in the peptidases category. The proteolytic cleavages that it causes involve the use of a water molecule, which makes it possible to classify the enzyme among the hydrolases, more precisely among the endopeptidases (EC 3.4.23.4). It is found in the gastric juice of newborns and young ruminants (cattle, sheep, goats), especially in the abomasum (fourth pocket) of their stomach.
